Robertshaw Infinite Oven Switch 5500-135M

The Robertshaw 5500-135M is an infinite oven switch used to provide continuously variable control of an electric resistance heating element. Unlike a simple on-off or stepped switch, an infinite switch cycles the element on and off over a repeating interval, varying the ratio of on time to off time according to the knob position to deliver any effective heat level between minimum and maximum.

Internally, the switch uses a bimetallic element heated by a small internal resistor. As the bimetal warms it opens the contacts; as it cools it closes them again. The control knob adjusts the mechanical bias on the bimetal, changing how long the contacts remain closed in each cycle. The result is smooth, stepless heat control from a simple electromechanical device with no electronics to fail.

Infinite switches are standard in commercial and residential cooking equipment, including electric ranges, cooktops, griddles, fryers, warmers, steam tables, and hot plates. They also appear in process heating and food service holding equipment where an operator needs to dial in a specific heat level rather than choose from fixed steps.

Symptoms calling for replacement include an element that only runs at full output regardless of knob position, an element that will not energize at all, erratic cycling, or a knob shaft that no longer holds its setting.

Verify the voltage and amperage rating, shaft configuration, mounting arrangement, and terminal layout against the original switch before ordering. Disconnect and lock out power before servicing, and confirm correct cycling behaviour across the full knob range after installation.
