The Robertshaw 8141-20 is a commercial defrost timer for 208/240 volt circuits, controlling refrigeration defrost cycles.

Defrost frequency deserves more thought than it usually receives, because the correct setting depends on the application rather than on a standard figure.

The frost load on an evaporator is driven by how much moisture enters the space and how cold the coil runs. A walk-in freezer opened rarely, in a dry climate, accumulates frost slowly. The same freezer in a busy kitchen, opened continuously through a humid summer service, accumulates it many times faster. A cooler holding wrapped product loads less than one holding fresh produce, which transpires moisture continuously.

Setting defrost from the observed condition of the coil, rather than from a default, is what produces a system that works efficiently. A coil found lightly frosted just before a scheduled defrost is correctly set; one found heavily iced needs more frequent or longer cycles; one found clear well before the cycle is wasting energy and raising product temperature unnecessarily.

Seasonal adjustment is reasonable where the humidity load varies substantially through the year.
