The interchangeable-head system is worth explaining on its own terms, because the alternative explains why it exists.

A conventional torque wrench has a square drive and takes sockets. That covers most work and it fails wherever a socket cannot go: a fitting in the middle of a tube run, a nut behind a bracket, a flare fitting on a brake line, a connection in a confined space. Sockets are deep and they need a clear end to slide onto.

An interchangeable-head wrench swaps the drive for a head that is whatever shape the job needs — open end, box, flare nut, ratchet, crowfoot — while keeping one calibrated handle.
