A locking plier is a clamp that happens to look like a plier, and understanding it that way explains what it is good at.

The over-centre mechanism is the whole design. Squeeze the handles past a point and the linkage goes over centre — the jaws lock and stay locked with no hand on the tool at all. That is the thing nothing else does: a plier needs a hand, a clamp needs setting up, and a locking plier applies serious clamping force instantly and holds it.

Which is why they are on welding benches everywhere. Holding two pieces in alignment while tacking them is exactly the job, and a welder has no spare hands.

The curved jaw is the general profile: it grips round stock, pipe, and rounded fasteners where a straight jaw only touches at two points.

The honest caveat: locking pliers mark what they grip. The clamping force that makes them useful is applied through hardened serrated jaws, and they leave teeth marks. And they are a poor substitute for a wrench — a locking plier on a fastener will turn it and it will also round it.
