Sterno STR10368 Chafing Fuel Handy Wick Food Service; 24 Each Carton Can

The Sterno STR10368 is a handy wick chafing fuel, methanol, wick form, 7.11 oz can, 6-hour burn, food service grade, 24 per carton.

Reading this against the stem wick 6-hour can in the same range: nearly identical capacity, identical burn time, different format.

The distinction is the can and how it sits in a chafer. Chafing dish frames are made to take a specific fuel can, and the fit is not universal — a can that is the wrong height or diameter either does not sit in the holder or sits too far from the pan. Too far and the food does not stay hot; too close and it scorches.

So the format follows the equipment rather than the preference, and a caterer buying fuel is matching it to the frames they own. That is worth stating on a listing, because two 6-hour methanol cans at almost the same capacity look interchangeable and are not.

The wick form is the modern one. Liquid methanol held in an absorbent body burns from a controlled wick, giving an even flame for the rated duration and a positive shutoff with the lid.

The safety point belongs on all of them: methanol burns with a flame that is nearly invisible in daylight. A lit can looks like a cold one. Assume it is burning, extinguish with the lid, and never move or refill a hot unit.
